【摘要】:ThisinternationalStandarddescribesaprocedurefordeteminingwhetherthereexistsaperceptiblesensorydifferenceorsimilaritybetweensamplesoftwoproductsconcerningtheintensityofasensoryattribute.Thistestissometimesalsoreferredtoasadirectionaldifferencetestora2-AFCtest(AlternativeForcedChoice).NOTEThepairedcomparisontestisthesimplestexistingclassificationtestsinceitconcernslnlytwosamples.Themethodisapplicablewhetheradifferenceexistsinasinglesensoryattributeorinseveral,whichmeansthatitenablesdeteminationofwheterthereexistsaperceptibledifferenceconcerningagivenattribure,andthespecificationofthedirectionofdifference,butitdoesnotgiveanyindicationoftheextentofthatdifference.Theabsenceofdifferencefortheattributeunderstudydoesnotsignifythattheredoesnotexistanydifferencebetweenthetwoproducts.Thismethodisonlyapplicableiftheproductsarerelativelyhomogeneous.Themethodiseffectivea)fordetermining-whetheraperceptibledifferenceexists(pairedidfferencetest),or-whethernoperceptibledifferenceexists(pairedsimilaritytest)when,forexample,modificationsaremadetoingredients,processing,packaging,handingorstorageoperation,orb)forselecting,trainingandmonitoringassessors.Itisnecessarytoknow,priortocarryingoutthetest,whetherthetestisaone-sidedtest(thetestsupervisorknowsapriorithedirectionofthedifference,andthealternativehypothesiscorrespondstotheexistenceofadifferenceintheexpecteddirection)oratwo-sidedtestsupervisordoesnothaveanyaprioriknowledgeconcerningthedirectionofthedefference,andthealternaticehypothesiscorrespindstotheexistenceofadifferenceinonedirectonortheother).Thepairedtestcanalsobeusedinordertocomparetwoproductsintermsofpreference.ThedifferentcasesofuseofthepairedtestaresummarizedinFigure1.
